Description:
A cool treat that's also a breeze to make.
Instructions:
Peel, pit, and dice the avocado and put it in a small bowl. Pour the
lime juice over and toss to evenly coat the avocado.
In a large bowl, combine the rice, drained beans, green onions,
cilantro, olive oil, salt and pepper. Stir to evenly mix, add the
avocado and stir gently to incorporate. Taste the salad for seasoning
and chill until ready to serve.
