However, if thawing is done in the microwave oven, the thawed food must be cooked immediately afterward.







Low-Fat Black Beans & Rice Directions

2 ts olive oil
1 c chopped onion
1/2 c chopped green pepper
2 c cooked long grain rice
1/2 ts ground cumin
1/8 ts ground red pepper
1/8 ts dried coriander
15 oz can black beans
3/4 c chopped tomatoes

Heat oil in skillet on medium-high heat, add onions, pepper and saute
until tender. Stir in rice and next 3 ingredients. Saute 3 minutes.
Add beans and tomatoes, cook 3 more minutes.
