Mediterranean White Bean Soup

Food Tip
Pack food in a cooler with ice or ice packs. Only pack foods which have been chilled to a temperature below 40 degrees F - do not use the cooler to chill room temperature foods. Mediterranean White Bean Soup Directions

Place the beans in a large pot with the water. cover and cook over
medium heat for 1 hour. Add the onion and garlic and continue to
cook until the beans are tender, 1 to 1 1/2 hours. add the potatoes
and cook another 20 min. Add the remaining ingredients and cook for
about 10 more min. Note: if you soak the beans overnight, the total
cooking time may be reduced by 30 min.
