In medium bowl, combine vinegar, soy sauce, mint, ginger, orange rind and
oil; set aside.
Place lettuce leaves on work surface; top center of each leaf with 1 ounce
beef strips, 2 tablespoons bean sprouts, 2 tablespoons cucumber and 1 mint
leaf. To make beef wrappers, fold sides of each lettuce leaf over
filling; starting from shortest end, roll leaves to enclose.
Place 2 beef wrappers on each of 4 plates, seam-side down; serve with
vinegar mixture for dipping.
Serving (2 beef wrappers with 1 1/2 tablespoons dipping sauce) provides:
1/4 fat, 1 1/2 veg, 2 pro. Per serving: 136 cal, 5 g fat, 2 g sat, 46 mg
chol, 192 mg sod, 4 g car, 1 g fib, 18 g pro, 24 mg calcium.
