“Happy and successful cooking doesn't rely only on know-how; it comes from the heart, makes great demands on the palate and needs enthusiasm and a deep love of food to bring it to life.” |
| Georges Blanc, Ma Cuisine des Saisons |
"Cuisine is both an art and a science: it is an art when it strives to bring about the realization of the true and the beautiful, called le bon (the good) in the order of culinary ideas. As a science, it respects chemistry, physics and natural history. Its axioms are called aphorisms, its theorems recipes, and its philosophy gastronomy." |

Cut steak into 1 inch pieces. Whisk together oil, lemon juice, water,
mustard, honey, oregano, and pepper in large bowl; add beef, bell
pepper, and mushrooms, stirring to coat. Alternately thread pieces of
beef, bell pepper, and nushrooms on each of 4 12-inch skewers. Place
kebabs on rack in broiler pan so surface of meat is 3 to 4 inches
from heat. Broil 9 to 12 minutes for rare to medium, turning
occasionally. Season with salt, if desired.
Kababs may also be grilled over medium coals for 8 to
11 minutes.
Yield: 4 servings.
