Combine cornmeal, baking powder, soda and salt in a large bowl; add
eggs, buttermilk, oil and cracklings, stirring just until dry
ingredients are moistened.
Place a well-greased 10-inch cast-iron skillet in a 450 degree oven
for 4 minutes or until hot. Remove from oven; spoon batther into
skillet.
Bake at 450 degrees for 25 minutes or until lightly browned.
Serves: 8
