When women are depressed, they eat or go shopping. Man invade another country. It's a whole different way of thinking. |

“This root [the potato], no matter how much you prepare it, is tasteless and floury. It cannot pass for an agreeable food, but it supplies a food sufficiently abundant and sufficiently healthy for men who ask only to sustain themselves. The potato is criticised with reason for being windy, but what matters windiness for the vigorous organisims of peasants and labourers?” |
| Denis Diderot (1713-1784) L'Encyclopedie (1751-1772) |
“Every country possesses, it seems, the sort of cuisine it deserves, which is to say the sort of cuisine it is appreciative enough to want. I used to think that the notoriously bad cooking of the English was an example to the contrary, and that the English cook the way they do because, through sheer technical deficiency, they had not been able to master the art of cooking. I have discovered to my stupefaction that the English cook that way because that is the way they like it." |

Food Tip |
There are only ten minutes in the life of a pear when it is perfect to eat. |
| Ralph Waldo Emerson |
"When treasures are recipes they are less clearly, less distinctly remembered than when they are tangible objects. They evoke however quite as vivid a feeling-that is, to some of use who, considering cooking an art, feel that a way of cooking can produce something that approaches an aesthetic emotion. What more can one say? If one had the choice of again hearing Pachmann play the two Chopin sonatas or dining once more at the Cafe Anglais, which would one choose?" |
| Alice B. Toklas |
Never eat more than you can lift. |

You are what you eat. For example, if you eat garlic you're apt to be a hermit. |

This recipe requires a heavy-duty bread machine, large enough for 3
cups of flour. For the lactose intolerant change cottage cheese to
nondairy sour cream. Reduce water to 3/4 cup.
Mix together flours, salt, xanthan gum, and Egg Replacer (if used).
Mix together the water, vinegar, sourdough starter, cottage cheese,
butter and eggs.
Measure sugar and yeast.
Place the ingredients in the baking pan of the bread maker in the
order suggested by your manual. Bake on regular bread setting on
medium heat.
