Recipe by: Dora Guerra <dguerra@LONESTAR.JPL.UTSA.EDU> Cook potato in
boiling water until tender, drain, and mash. Add 1/4 c. parmesan
cheese and next 4 ingredients; beat at med. speed of mixer just until
mixture is smooth. Stir in egg substitute. Pipe or spoon potato
mixture into 6 mounds on a baking sheet coated with veg. spray;
sprinkle evenly with 1 tbsp. parmesan. Bake potato mounds at 350
degrees for 25 - 30 min. or until lightly browned
