Place in a saucepan the sugar, salt and cornstarch. Mix in the apple
juice and cook over medium heat 5-8 minutes, stirring until mixture
is creamy and transparent. Add the brandy and the butter. Beat the
egg and add to the sauce gradually, beating with a wire whisk. Serves
8. (Sauce can be made ahead of time and just reheated)
