Food Tip
Keep the hot foods hot and the cold foods cold. Use chafing dishes or other heated servers which keep already hot foods at a temperature of at least 140F. Do not leave high-risk foods out for longer than 2 hours. Make sure to stir the food frequently if the heating source does not cover the entire bottom of the dish. Cold foods should be set on ice. Never mix fresh food with foods that have already been out for serving.

Marshmallow Frosting

"Cuisine is both an art and a science: it is an art when it strives to bring about the realization of the true and the beautiful, called le bon (the good) in the order of culinary ideas. As a science, it respects chemistry, physics and natural history. Its axioms are called aphorisms, its theorems recipes, and its philosophy gastronomy."

Ginette Olivesi-Lorenzias

Marshmallow Frosting Directions

Combine sugar, water and vinegar in a heavy saucepan. Cook over medium
heat, stirring frequently until mixture comes to a boil and sugar
disolves. Continue cooking, stirrin frequently until mixture reaches
soft ball stage (240~). Beat egg whites until foamy. While beating at
medium speed, slowly pour hot syrup in a thin stream over egg whites.
Turn mixer to high speed and continue beating until stiff peaks form
and frosting is thick enough to spread. Fold in marshmallows. Enough
to cover a 3-layer cake.

Serves: 1
