Rinse bean sprouts in cold water. Heat oil in pan and add scallions,
onion & sprouts. Stir fry 1". Add cornstarch, soy sauce, shrimp, salt
& pepper. Mix well. Remove to dish & allow to cool. Combine with eggs.
Heat 2 T oil in pan & ladle in 1/6 of egg mix. Fry til golden on
both sides. Keep pancakes warm in low oven, while making sauce.
Combine sauce ingredients in small pan, bring to boil & simmer gently
til thickened. Makes 6 pancakes.
