2 package frozen chopped spinach, thawed, well-drained
1/2 cup onion
1/2 cup celery, diced
1/2 cup cheddar cheese, shredded
1 1/2 cup mayonnaise
2 tbsp lemon juice
1 1/2 tsp horseradish
4 hard-cooked eggs, chopped
1/8 tsp salt
1 black pepper, optional

Spinach-Egg Spread Directions

Mix drained, thawed spinach with remaining ingredients.
Refrigerate to chill thoroughly.
: Pack in container and place in ice chest, being sure it stays
cold. Make into sandwiches at the beach. Goes well with dark bread.
