Pour the lemon juice over the apples and kix in well.
Squeeze thje apples gently to dry. Mix the apples with
the lemon rind, cinnamon, sugar, egg, & bread crumbs.
Chill in refrigerator for 20-30 minutes Make balls of
this mixture 1" in size Drop them in a boiling pot of
slightly salted water. Cook until they rise to the
surface then remove with a slotted spoon. Cool to room
temperature. These may be added to a cold fruit soup
or eaten with many other foods.
