If raisins are dried out or sugary, put them in a heat-proof container and cover them with boiling water. Let them stand for approximately 5 minutes, drain and pat dry. This process will plump up the raisins.

Combine gelatin, sugar and boiling water in blender container. cover
and blend at low speed until gelatin is dissolved. about 1 minute.
add ice and STIR until partially melted. add cheese. cover and blend
at high speed until smooth, about 1 minute. pour into individual
glassses or a serving bowl. chill until set, about 30 minutes. top
with one or more of the toppings if desired.

makes 2 1/2 cups.
