* Cut into 1" strips ** Salt and pepper to taste.
1. Pre-heat oven to 350 degrees 2. In a shallow plate dredge chicken
in flour; shake off excess.
3. In a large skillet heat 2 tablespoons of the oil. Quickly saute
the
chicken over medium-high heat, turning over once, untill lightly
browned. Remove to a 2-quart, covered baking dish.
4. Heat remaining oil in skillet. Over medium heat saute onions,
pepper
strips and mushrooms, tossing occasionally, untill onions are
wilted
and peppers are crisp-tender. Season with salt and pepper. Cover
chicken with pepper mixture.
5. Bake, covered for 30 minutes 6. Uncover; bake 10 minutes more.
7. Sprinkle parsley over all. Serve.
