heat the butter over medium-high heat and sauté the onions for 3 to 4
minutes, until tender. Add the potato cubes and cook for 10 to 12
minutes, stirring occasionally. Add the corned beef and cool for 5 to
6 minutes, until heated through. Place the mixture in a 9X13 baking
dish that has been coated with nonstick vegetable spray and, with a
serving-sized spoon, make 8 evenly spaced indention's about 1/2 inch
deep in the mixture. Crack the eggs one at a time and place each egg
in an indention. Cover the dish with aluminum foil and bake for 20 to
25 minutes, or until the eggs are cooked to your liking.
